Homemade chicken broth

I use this broth in all of my soups and stews, it adds a lot of flavor. I love that I can just throw it in a pot with some frozen veggies and pre-cooked chicken and have an amazing healthy homemade soup in minutes.

1 whole chicken
Water (just enough to cover the chicken)
4 cardamom seeds

2 Cinnamon sticks
2 Bay leaves
1 quartered medium onion
1/4 lemon
Pinch salt
Pinch all spice
Pinch white pepper

 

Wash the chicken, my mom scrubs it with flour and rinses off I think it works very well it takes away what we call the “zankha” smell .
Boil on high until the white foam comes out, remove foam with a spoon. Add the rest of the ingredients and cook on low heat for an hour. The meat should fall of the chicken easily just separate from the bones and freeze for later use. Divide the broth into freezer safe containers and freeze up to 3 months.
